I included this recipe specifically for my mom because she loves the pumpkin shakes from our local co-op market. This pumpkin smoothie is perfect for Fall breakfasts because not only is it sweet and creamy, but it contains 20g of plant-based protein! It’s naturally sweetened, high in vitamins and fiber, and super easy to make! If you prefer to drink your pumpkin flavor, I definitely suggest this smoothie!

I’m a sucker for any sweet treat with a crumble topping, and these pumpkin oat muffins are no exception! They are sweet, easy to make, have simple ingredients, and the texture is perfect! You can even add berries or apples to these muffins to give them more flavor, but I think the pumpkin is great on its own. If you love convenient, grab-and-go snacks, you may have to try baking these muffins!
